Cooking Heritage Turkeys

So, you’ve grown or ordered your heritage turkey and plan on cooking it like the Butterballs you’ve cooked in the past.  Not so fast!

Heritage turkeys are different from their agri-business turkey counter-parts in many ways and are cooked differently.   Here are two links for recipes.  I am following the Mommypotamus site for ours this Thanksgiving.  I like some of her recipes, so I figure I might as well.   Both have explanations of why heritage turkeys are different.
