The picture above is from our dinner tonight. This is a popular dish in our house It is one of my family’s comfort foods. The combination of rosemary and garlic just makes the house smell good. In general, there is something about the smell of home cooking that soothes the soul. It can bring the family together to talk about their day while they prepare a meal together. First, remember we have a large family. You may need to half this recipe or even quarter it. Or you can make it and freeze portions for later.
For this you will need:
3 lbs organic potatoes
Organic olive oil (tested-pure) We’ve also used peanut oil which is better for higher heats.
2 tbsp. organic Rosemary
1 tsp. organic garlic powder
1 tsp. real sea salt
a dash of pepper
If you’re my husband – a bit of cayenne pepper (usually added after the potatoes are done).
A lipped cookie sheet
Set the oven to 45o F. Scrub and chop unpeeled potatoes in small to medium chunks. Put the potatoes in a plastic bag like a Ziploc or a bowl large enough to mix everything in. Add the seasonings to 1/2 cup of oil and stir until blended. Pour it into the bag or bowl, then add enough oil to coat the potatoes well. Mix it really well. You want the herbs to blanket all the potatoes.
Spread the potatoes out evenly on the cookie sheet. Pour any remaining oil in the bowl or bag over the potatoes if desired. Cook for 20 minutes and flip them over or stir them up. Cook for another 20 minutes and flip again. Start watching and fork testing them. When the fork finds only soft potatoes, they are done. If you want them crispier, just leave them in for a bit longer. The time will be determined by how you cut the potatoes. Smaller pieces will need less time; larger pieces will need more.
If you feel there is too much or not enough of something, tweak it until you find the right balance for your family. Enjoy! I’m going to go steal another one off the cookie sheet, before my sons get home from work.
